1)Chicken medium cut pieces with bones 10-12 pieces
2)whole spices :
-cinnamon sticks 2 finger length
-cloves 6-9
-pepper 10-12
-dried chillies 4-6 (depending on spice profile)
3)Powdered spices
-pepper powder 2 teaspoons
-Garam masala 1 tsp(optional)
-salt to taste
4)oil half cup/6-8 tablespoons
5)water one cup


Into a nonstick wok/deep bottomed dish add all the above spices and water and oil.
Bring to boil and add the chicken pieces and cover.
Let it simmer for 20 mins.
Then remove the lid and let the water evaporate leaving behind the oil and allow chicken to broil and roast in its oil and juices till crisp brown colour appears on the surface of chicken.
Enjoy with bread, chapatti, pita bread or kubus, salads, hummus or mayo!
