Pork Pot Roast
Boneless pork-1/2 kg cubed
Shallots- a handful roughly chopped
Onion- 1 sliced
Dried red chilli- 8-10 split (if using dried Kashmiri red chilli (piriyan mulaku) use 15
Curry leaves- a handful
Kashmiri chilli powder- 2 tsp
Mix everything together and pressure cook. Do not add extra water.
Once the meat is cooked well open and keep on medium-high flame until all the water evaporates.
It tastes even better when cooked a little further. The fat will start melting and the pork pieces will start getting slightly crispy on the outside. Serve hot
