KURUMA

Ingredients 

Spices:

4tbsp garam masala

1tbsp cumin powder

2tbsp pepper

1/2tbsp yellow powder

salt to taste

Vegetables:

2tbsp ginger garlic paste

2 big onions

2 medium to big potatoes

2 tomatoes 

1/2 cauliflower

200 gms green peas

100 gms beans

2 big or 3 small carrots

other vegetables as per preference 

few leaves of coriander 

3 green chilli cut in half

1 1/2 cups coconut milk

3-4tbsp of fresh cream or 8-10 cashew nut ground to paste

milk if required

3tbsp oil 

2tbsp butter

1-2 tbsp sugar

Instructions 

Also boil the vegetables in water along with 4-5tbsp coconut milk, salt, 1tbsp garam masala, a pinch of yellow powder, then sieve and keep aside.

Also boil the potato in salt water and keep aside.

Caramelise the onions in a pan with vegetable oil, butter and salt to taste, along with ginger garlic paste and green chilli. Once caramelised add in the tomatoes.

Then add in the rest of the spices. After 1 minute add in the coconut milk and cashew paste/ fresh cream. Boil for 1-2 minutes and add in all the vegetables. Add in the milk if the gravy is too thick. Then taste and add if spices if necessary. Add in 1-2 tbsp sugar to balance the spices.

Note: Keep for 2-3 hours so that the taste will increase!
